Green Smoothie

A green smoothie is my go to breakfast, especially on hot SoCal days!

1 cup of frozen pineapple
1 cup of frozen mango
1 cup of frozen strawberries
1/2 cup almond milk
1/2 cup strawberry c-monster juice (Odowala brand)
1/4 greek yogurt
1 tbs flax seed oil
1 tbs chia seeds
1-2 handfuls of spinach
Ice (if needed)

In a blender ( I use a blendtec, but any will due) dump all ingredients. Put frozen ingredients on the bottom and spinach at the top. Blend until smooth. Taste your concoction and add more ingredients if needed, I find I usually need to add more juice or almond milk. This usually makes 2 extra large smoothies or 3-4 regular ones.

I made some modifications.
This is a double batch it feeds a family of four for at least 3 days, or a small party


    1/2 an onion chopped
    3-5 cloves garlic, minced
    2 T. chili powder
    2 tsp. dried oregano
    1-1 1/2 28oz. cans crushed tomatoes
    1/4 c. water
    2 10.5 oz. cans of chicken broth
    2 c. corn
    2 4oz. cans green chiles
    1/2 of a red bell pepper chopped
    1/2 of a green bell pepper chopped
    2 15oz. cans pinto beans, drained and rinsed
    1/4 c. fresh cilantro, chopped
    4 boneless chicken breats, cooked & chopped.
1 tbs chili powder
1 tbs garlic powder
1 tbs cumin
1 tbs salt
olive oil

Pre-heat oven to 375 degrees. Line a cookie sheet with parchment paper. Place chicken breasts on the cookie sheet and spray with olive oil. Mix chili powder, garlic powder, cumin, and salt in a small bowl. Sprinkle over chicken, flip and sprinkle on the other side. Bake for 20-25 minutes then shred with a fork.
Coat the bottom of a large pot with olive oil. Brown garlic, onion, and bell peppers until soft. Add chili powder and oregano. Then add 1/2 of a can of tomatoes and one can of chicken broth. Taste add more tomatoes and chicken broth if desired, I usually use 2 cans of chicken broth and 1 and 1/2 cans of tomatoes. If too thick and 1/4 c of water. Bring to a boil and let simmer for 10-20 minutes. Add corn, chiles, cilantro, and chicken. Bring back to a boil and simmer 10-30 minutes. Garnish with baked tortilla strips and cheese. 

Calories (with out cheese and tortilla strips)- 127 calories

Healthier tacos

I'm using this blog to digitally catalog my healthy recipes, and maybe help others try something new.

First up I have my turkey tacos. You need:

1 pound ground turkey
1 tbs garlic powder
1 tbs cumin
1 tbs chili powder
1 scant tbs salt
1/2 tbs onion powder
up to 1/2 ketchup (I know it sounds weird, but trust me it's good!)
up to 1/2 cup water
corn tortillas
optional garnishes: cheese, lettuce, tomatoes, and sour cream.

In a large skillet brown turkey meat. In a bowl mix garlic, cumin, chili, salt, and onion. Sprinkle half the mixture on the brown turkey. Add ketchup tablespoon at a time, taste and add more if desired or add more seasoning if needed. Add a 1/4 cup of water and add more as needed. Reduce heat and let simmer until liquid is absorbed.  Warm  corn tortillas and add turkey meat and garnishes.


Serves: 4-6

Nutritional information for 6 servings: (not including garnishes)-  189 calories, 6.3g of fat ,1.8g of saturated fat, 53.3mg of cholesterol, 17.5g of carbohydrates, 2.3g sugar, and 16.8g of protein.

Not too bad if you ask me!
